SOFT PUMPKIN CHOCOLATE CHIP & NUT COOKIES
Yield: 3 dozen Prep: 20 mins Cook: 11 min
INGREDIENTS:
1 cup pumpkin puree
OR 1 cup hot water and ¼ cup pumpkin powder
2 tsp baking powder
1 cup granulated sugar
1 tsp cinnamon
½ cup oil
2 cup flour
1 tsp vanilla
½ tsp salt
1 large egg
1 tsp baking soda
1 tsp milk
1 cup semi-sweet chocolate chips, and for heaven sakes if Kurt see the bag of cholate chips, you need to have a back-up in stock.
1 cup chopped walnuts
INSTRUCTIONS:
1. Preheat oven 375 degrees. Line cookie sheet with parchment paper.
2. Combine pumpkin, sugar, oil, vanilla and egg. Mix until well combined.
3. In a separate bowl, stir together the flour, baking powder, cinnamon & salt.
4. In a small bowl, dissolve the baking soda with milk.
Add both the dry flour and wet baking soda mixture to the pumpkin mixture. Mix well.
5. Add chocolate chips and nuts and mix.
6. Using a medium cookie scoop (1.5 tbsp.), drop mounds of the cookie dough on the prepared cookie sheets and bake for 10-12 min. Allow the cookies to cool slightly before removing them to a wire rack to
cool.

I have doubled this recipe, and it works great, because Kurt raids the plate when they are coming out of the oven, so that's a factor.

1 tbsp apple cider vinegar
2 cups olive oil
Use an immersion blender with an up down motion.
You just made MAYO that is "healthier" than store bought.
It lasts in the fridge about a week.
